3 Clean Eats Wish List Items

Photo Via So I study and review a lot of different food and brands more than ever.   I'm very much conscious of what I'm feeding hunter and myself.   I think of the expression "Your biography becomes biology" and yet inspires me to research ways to make good healthy food. I've found some utterly awesome accounts to follow on Instagram mostly and I lean on these folks for recommendations.   Currently on my list are the following items: Jill's Mediterranean crackers Kraut Sprouted bread-type to be determined... A fave Instagramer of mine shared a recipe using these crackers as flour for healthy, bomb chicken tenders.   I am so so intrigued, as is hunter. I like Kraut and think it will be good to mix in to salads or veggie bowls for added natural flavor. Apparently sprouted bread is better for digestion.   I like the sounds of that so going to give a whirl. Stay tuned for follow up recipes and creations.

Egg Salad Sammy

Whipped up some hard boiled eggs, mixed with Greek yogurt, sliced some grape tomatoes, and a few splashes of hot sauce served with toasted white bread.  Wa. La.   Clean, healthy, and filling. I like simple food and I like easy preparation for it.   Bam.

Clean

For me January is about intending more than resolving.   Fighting off the dreaded holiday hangover is perhaps as grueling and basic as it sounds and requires a very direct approach to feeling human again: -Simple, clean ingredients -plentiful and planned sleep I usually feel the effects of how I treat my mind and body from the week before's treatment.   I've felt like a zombie the first week of January, seemingly from the previous week's holiday food/drink/lack of sleep bender. This meal was quick, easy, healthy, and filling.   Yummmmm.....mmmm!

Another 3 Things

 3 Things are my favorite: I'm loving Panera's cleaned up ingredients for their menu options.   I tried the Chipotle Melt and it was quite yummy.   I got chips with it and it was, as always, delicious.   Hunter's Italian was very tasty as well. We did Christmas Bingo with Hunter's family and it was so much fun!   We had two piles- one for kid items and one for the grown ups.   We grabbed a mix of things like gift cards, adult coloring books, and Harry Potter jelly beans for the kids.   Those were so much fun!   Everyone's reactions were fantastic.  Here's just a glimpse of mine when enjoying some delicious dirt and sausage jelly beans: I am making this.   I'll hold while you salivate momentarily... How Do You Keep Clean?

My favorite thing to eat lately is spinach artichoke hummus and kale chips.   I am obsessed a little actually.   It's just so yummy and made with real ingredients and not bogged down with unpronounceable items. This is the stuff I look out for more than anything else.   Nowadays so many people will tell you do this, try that, eat 7.5 meals daily of no less than 23 and 46 yada yadas.   I'm exhausted even attempting to provide examples. I feel best when I eat clean food and drink lots of water.   That's just what works for me.   I like to go to places like Lucky's Market and Whole Foods to find products to try here and there.   Pick up a soup, grab different premade meatballs, try out a new chocolate; basically it's a fun way to scour deals and explore new items that serve ingredients of better substance. I don't do full shopping at either of these stores.   I find their best use for us is to try new things.   I love the ease ...

Simple

I like the simple things in life more and more as I age.   Especially in eating.   I don't follow fad diets or count calories, instead I read ingredient lists more. I'm interested in clean eating because it's simple and it the best way to take care of our minds, bodies, and ultimately our soul.   "You are what you eat so don't be fast, cheap, or fake." Let's be very clear, I don't recommend never indulging and enjoying a donut in all its overly processed glory.   Life is short and all so have the delicious granulated sprinkles. We shop between Fresh Field Farms , Lucky's Market , and Publix/Target for groceries and between them all I find good items that fit what I'm looking for.   Excited to try Lucky's Market Chicken Parmesan Meatballs this week.   All simple, pronounceable ingredients so we will see if it makes the repeat purchase list.   Stay tuned.  

Homemade Summer Veggie Sandwich

I needed a quick fresh meal for lunch and decided a veggie sandwich with homemade avocado buffalo sauce smeared all ovaaaaa it would be just fab. I love summer veggies so squash and asparagus are on constant reorder for us this time of year.  I pan sautéed them in a teaspoon of olive oil just enough to crisp them.  I grabbed some spinach and honest to God I massaged it with less than a teaspoon of Newman's Italian Family Recipe dressing.  Who am I??  I spend my meal making time massaging greens??  You know how I know you're 30... Anyhow, it was the mixture I created of fresh avocado with medium buffalo sauce that realllllly set this yummy dish off.  Talk about a marvelous flavor combo!  Finally I sprinkled a lil'parmesan over the top and bam.  Lunch was had. I love meals like this.  It took me 15 minutes total and was a dance party of flavor among my taste buds.  Homemade and healthy for the win always. Let's meet...

The Tale of the Banana Zucchini Bread

I like to bust my mom's chops regaling this story any chance I get about that time she tried to over stuff me with bananas: When I was about 6 months old, my mom tried feeding me bananas at 2 in the morning.  According to her, I went total happy feet all over bananas.  I "just kept opening my mouth for more and more" she'll say.  Well, after a few bushels, I in fact proved I did not love bananas and was most definitely, seemingly having a reaction to the several bunches I had just consumed. My mom lived back with her parents when I was first born because my dad was Chief Engineer on a ship traveling most of the year.  She was a new mom and didn't want to stay at our house alone.  So in this instance, she jumps up, runs to her parents room, shrieking to wake them. 3 Things

I really love what is rapidly becoming a segment on ol' Ohgabetta here.  3 Things is a quick way to express any thoughts I've got.  I like expressions and I like thoughts so what a happy coupling.  Or is it happy tripling since its 3 things?  Solid question, Meggie.  Here we go! Broccoli Brown Rice Cashew- My impromptu makeshift lunch the other work day.  I sometimes experience reflux issues and when I do I stop, hammer time, and change it up.  This required a run to Publix to grab non trigger foods, read also: most tasty items.  Brown rice and broccoli help aid the process of settling reflux so with those purchases away I went back to work.  After preparing these two parts, I remembered I had dry roasted organic cashews in my desk drawer.  With a few mixed in, Wa-la.  We had what I will affectionately call Broccoli Brown Rice Cashew.  It was incredibly good and not bland or cardboard-esque which was my fear....

Things have been busy.  I am working on a new project at my day job which is fresh and keeps me moving.  Before I know it the time is up and the day is done.  I like that.  The New Year has us motivated for our business and we are unfolding new layers of promotion for it while honing in on our current client campaigns with excitement.  I'm eager for it anew and it feels so right.  Like most people with babies say, I feel like I can't imagine our lives without or before our baby business was in it. I think I want to host this weekend.  I feel like cooking up some goodness by way of my crockpot and dolling up an appetizer or two.  Oh and not now, because quite honestly my phone is in the other room and well, I am not, I will be posting about a Baked Crab Rangoon recipe I used on New Year's Eve.  I took blog pics and all.  I'll say this: it clearly DID NOT disappoint and I feel it only my duty to share and pass it on. Alfredo Stuffed Shells a la Florentine

Hopped in the kitchen to whip together some spinach and tomato stuffed shells with an Alfredo sauce this weekend. I followed a basic recipe of a ricotta and shredded Italian cheeses mixture for the filling and decided to throw in some toms and spin that needed to be used. If I'm being humble, it came out particularly delicious. I also rolled some pepperoni and fresh mozzarella croissants for Super Bowl yumness, shown in the pic on the back part of the stove. I brushed the amazing olive oil that I talked about before in a post , along with Parmesan cheese over top, and wa-la! Hunter asked me to marry him all over again with this one. Sometimes my most favorite place to be is in my kitchen, no real recipe, just going through the fridge and saying, "Yea, let's just try this..." Until we meet again, M

Some chili for my chili

Hunter said during last week's FL cold front, that he really just loves chili. So when I awoke this past Sunday feeling a bit of chill in the air, I headed to the store with intentions to spoil my boo with a homemade version. Thank God for good directions and turnip greens because the recipe I found through All Recipes site was too.too.too. good! So easy and quite delicious. The only differences in what the original recipe called for versus what I made was that I used some canned mild chilies and no cumin, and I added corn. This might just be my best idea yet in 2015. The instructions were straight forward and provided me an easy way to look like an actual chef. Shut up! I love when that happens!! Behold! The final product: With a sprinkle of some cornbread crumbles (total last minute idea; some of my muffins stuck, how rude!) and an actual jiffy cornbread muffin, it was a lovely meal. Blogtober Day 13: Favorite Fall Recipe

Yummy food y'all? Just yes. Yummy fall food? YES, YES. Chili, turkey, gravy, white hot chocolate, any and all kinds of soup, absofrigginlutely. The one that wins the race today, for what Blogtober is asking, would have to be none other than... My mum-in-law's pumpkin cheesecake swirl bread! Now, I do not have a picture of her exact one, because quite frankly we eat it too fast to even think of where our cameras are. However! I did find a rather similar looking picture via the holy grail of missed picture opps, aka Pinterest : via This screams fall favorite and I wouldn't have it any other way. It has just the perfect amount of pumpkin flavor, the cheesecake adds a hint of decadence, and she makes them in mini loaves, which due to my love of anything mini, like say dwarfs, I am a fan. Holiday Weekend, where have you gone?

My, my, my that holiday weekend flew by! All the usual feelings are present and accounted for: happiness from the greatness we experienced; frustration with getting back to the daily grind of reality; and a certain sadness that stems from it all being over. 4th of July signifies the middle of summer so we are now on the descend of the season. I won't be the saddest to see the heat go, if it ever does, but I am eager for fall! I know, I know, no need to get ahead of ourselves. Don't worry, I'm not going to start ordering my white hot chocolate and demanding it in the red Starbucks cup. Yet. Although, I did bust out some new Lauren Conrad boots and tights the other day. I scored the kicks from Kohl's , which were at a severe, severe discount. I got an even better deal than what the site lists them for. Basically, people, it's happy trails ahead! A party without cake is just a meeting -Julia Child

I'm just gonna go ahead and add this to the good file of baking adventures. I simply bought a box of Krusteaz and followed the recipe on the very bottom of the box, the extra one with cream cheese added. Man oh man oh man. It was easy peazy. I was inspired to try the lemon lovies because of Pinterest this past weekend. Every.single.pin was relative to lemon this, lemon that. So enough was enough! I made them and we tried a couple, and while good, one can only pucker up for some lemony goodness so much. I recalled that we had a team meeting Monday, so I promptly chopped the little beauties into bite sized morsels and away I went bearing goodies. I have to say this is top 3 of easiest recipes to follow along with for quite a delectable outcome. Nothing like some lemon to get you moving and grooving in sweet summah time. Til we meet again, M

Mmmm Monday's

It is no secret that I adore pasta. Baked, stuffed, with marinara, with butta and Parmesan, mmm, mmm, mmm! Also no secret is my excitement when I find a new recipe that is easy-peasy and allows for meal planning, meaning I make it once, we reheat for lunches, dinners etc. AKA hence the purpose of this blog post ;) It all started when I found a "skinny" recipe for stuffed shells with spinach. I love this because it calls for very few ingredients, ones I mostly always have on hand anyway, and is quite simple/fun to assemble. The pictures ahead show a play-by-play of how to create this positively delicious meal. I made one dish with homemade sauce (eek, I made my own sauce!!!) and during the process I decided to throw a dish of Alfredo together to mix it up.
