Homemade Summer Veggie Sandwich

I needed a quick fresh meal for lunch and decided a veggie sandwich with homemade avocado buffalo sauce smeared all ovaaaaa it would be just fab. I love summer veggies so squash and asparagus are on constant reorder for us this time of year.  I pan sautéed them in a teaspoon of olive oil just enough to crisp them.  I grabbed some spinach and honest to God I massaged it with less than a teaspoon of Newman's Italian Family Recipe dressing.  Who am I??  I spend my meal making time massaging greens??  You know how I know you're 30... Anyhow, it was the mixture I created of fresh avocado with medium buffalo sauce that realllllly set this yummy dish off.  Talk about a marvelous flavor combo!  Finally I sprinkled a lil'parmesan over the top and bam.  Lunch was had. I love meals like this.  It took me 15 minutes total and was a dance party of flavor among my taste buds.  Homemade and healthy for the win always. Let's meet...

Homemade Sushi Bowl

Friends at my old work place used to grab sushi bowls from Publix on our lunch break. I never tried one myself but they looked and seemed delicious and were met with rave reviews from them. A few weeks back we grabbed amazing crab meat at Freshfields Farm for a deal. I recalled this little memory of sushi bowls and knew I needed to make one. I love recreating foods at home that I learn of or try when out.  This one is surely a fave. I made basic brown rice, sliced up cucumber and avocado, mixed Greek yogurt with siricha and bibbity boppity boo.  Delicious and healthy, hearty yet light.  It will be a repeat.  This is a good meal for nights Hunter craves something he only likes since I love sushi but he doesn't care for it. Homemade Pita Chips with Smashed Avocado

The other night I was resting from this ailment I'm plagued with and I got hungry. I didn't want anything heavy but rather filling. I was watching Teen Mom actually and Maci and her friend has just ordered guac and that sounded delicious.  I went to the kitchen and scoured for what I could make of similar nature. I took a flour wrap and ripped into pieces, sprayed some olive oil mist over them, sprinkled garlic powder and sea salt over top, then broiled for 6 mins, flipping halfway through.  Homemade pita chips essentially.  I paired with smashed up avocado, tomato and garlic.  A light yet filling, perfect healthy snack.  Now just to kick the ol'bronchitis and I'll be the happiest little lamb.  #enoughcougingalready Let's meet again, M
