Healthy Crockpot Chicken Chili

You say cornbread, I say don’t forget the tortilla chips .  Made this healthy crockpot chicken chili the minute the weather hit below 75.  Judging by the numerous chili dishes popping up on all social media feeds, I'm not the only one inspired and to all I say: kudos.  Celebrate this glorious weather and get down with your wonderfully excited for fall self!   For this recipe , I altered the spices slightly and garnished with fresh spinach and cheese.  Excellent way to enjoy fresh greens in their most nutritious state 🍲😍🙌!

Chaos in Crowds

It's crazy how much I don't like going into stores during certain times anymore.   And by certain times I mean mostly anytime between open and close.   I kid mildly, but really I've come to have a real distaste for running into a Target on a Saturday.   We have a good sized town center 4 miles from my house with most every basic need and then some for retail options.   I've always loved this lovely outdoor mall but in recent years, it takes a lot for me to go to it any ol'time of day. My ideal time to frequent it is during the week on maybe a Monday, Tuesday, or a Wednesday between the hours of 8am and about 1pm.   Crowds are minimal, those that are there also seem to be on the same wavelength of appreciating less chaos, and inventory is at peak.   This.   This is when it exudes its holy land esque style for me. #Brunching

As we close out such an amazing weekend (Who am I kidding, ALL weekends are amazing by default), I am so extra grateful for the people in my life, the memories made, and the celebrations for goals and of moms. Weekending

Last week was divine chaos. I'm working my normal FT work schedule; working on two personal business ventures; taking a social media certification program; and working on an extra project for a work event that's happening in March. It's fun and rewarding and I love every second of it. I just have to jot down times to come up for air. On Saturday we attended a friend's business anniversary party. His shop celebrated one year and some change in existence and I can't say enough how empowering it is to know people who are actively living out dreams, who are getting up every day to get after it all over again. Hunter and I took in the beautiful Florida winter weather for brunch outside as well. Below is a Kobe Beef burger with a'egg atop and Bang Bang Shrimp Benedict with asparagus. Sunday looked a little like this: Kale, Spinach, Pepper Jack, Onion and Tomato His and her: For the win: Hmm, what else. what else. We both threw on our designated Pandora stations and power cleaned. Enjoy life, this is not a rehearsal

Another weekend come and gone, another holiday accounted for. I lived up to the itinerary I outlined on Friday quite well. I believe I failed to mention this partFriday, but I created a glorious 4 days off for myself so I have an extra day before returning to reality. This got me thinking about all I've been able to get done while still enjoying time off from alarm clocks and routines. I'd like to go on the record and fully endorse what my campaign would refer to as the "4/3 Greatness". This would be where we would all work 3 days and have 4 off. I mean, the whole life's too short mentality? Um, yea. But most people can't just quit working due to the need for survival and lack of a silver spoon birth right. Today is a good day, my friends. Today means at the 6 o'clock hour I shall enter a four day weekend. Full of what, you ask? So far on the agenda is: -trying out a very new and deliciously enticing restaurant known as Cooper's Hawk and Winery; -finishing the rest of season 5 and all of season 6 for Sons of Anarchy-which is phenom BTW; -and enjoying the beautiful weather we are projected to experience, with extra SPF of course. I like to call this agenda a little something known as living the American dream indeed. Oh and I'll be toting around my newly obtained Kate Spades. Surprise 75% off sale, what? I CANNOT wait for the tote! I'd like to dedicate the title of this post to you, Monday. Although, I happen to be off work today and have already caught laundry up, exercised for an hour and a half, had lunch with a friend, and now I am posting here. I'll take a win for $500, Alex. The weekend was fabulous. Among workouts and being outside with the dogters a whole bunch, we also started the Netflix series House of Cards and let me just say, wowwwww. We love it and ran through the first seven episodes of season 1 in one sitting. Kevin Spacey was phenomenal before this and now he is quite possibly my favorite actor ever. Cannot wait to resume it tonight. We also visited with our Roberts family. Connor, aka Nonner, is more adorable every time I see him. He now gives his own high fives without prompting and also "bumps it" on your fist with his. To.die.for.people. Monday. The spawn of Satan's favorite day. Ugh, some are worse than others, that's for sure. Today is currently a dreary kinda day too; gray skies, stagnant air, a bit of depression breezing throughout the trees. Looks like Monday showed up dressed in its finest. Oh well, this too shall pass and soon it will be Tuesday which is usually the better looking sister of week days. But you know, always there is a silver lining. For instance, if we didn't have weekend recaps to live for, what do we have? I even had only one day off this weekend and I still managed to have an amazing evening and day off. Well, weekend you did not disappoint. I had so much fun I decided to do my weekend recap post on Wednesday. Fancy me that! On Saturday, a friend of mine was surprised for her birthday brunch (with mimosas naturally) making it a glorious success: Happy birthday Cassandra! So then, Ronda and I says, hey it's Saturday. Let's hit up the good ol'ale House to grab a few bevs with my Hunty. We had a good time y'all! Then I needed a little nappy and some Advil. I woke up in the late evening to enjoy some random movies a la television by the likes of Grandma's Boy, She's All That, and then some House Hunters. What can I say? I didn't choose the thug life, it simply chose me. No, I don't think I got that right exactly... Sunday presented homework and work so ehh, but then! The Grammys were on!!! Weeeee they were so good! The agenda this weekend: -lounge -brunch -mimosas -friend surprises -cook something extravagant and delightful -third to last homework assignment -finish the amazing fashion book from my aun-tay -drink hot tea -pet my dogters -watch HGTV w/my bub I will also squeeze work in but it's okay because it is a short day. Also, the plan to hatch some blogging ideas exists and I will be working on a client promotion project as well. So, there we have it. My projected weekend itinerary. I really need a day between Saturday and Sunday

What a weekend. I feel so fortunate while exhausted and rejuvenated at the same time. I freaking love weekends. This weekend was a mix of work and play. Homework had to be done by both Hunty and I but we still managed time for a lunch out for a fresh fish sandwich for me an a buffalo chicken for him. Plus margaritas, which were on special Saturday. This and the fact I got my homework done early made me a very happy lady. This is only the third time in the last 12 months homework got done early BTW. 2 weeks to go folks. 2 weeks... Let's see. Oh yea, I also binged on Teen Mom 2 repeats, watched The Help, and read through my Christmas gift from my aunt Janine. And the newest People Style Watch. This is what my dreams are made of.
