My weekend, my friend and a whole lotta pictures

What a successful weekend. I worked most of the day Saturday and managed to get so many other things accomplished still. Specifically, tons of school things were completed, initiated, and planned for. Enjoyed some grocery shopping and made yummy meals while knocking out some house chores too. Busy with purpose is the only way to get over being busy, ya know? This is a part of my thesis I am very excited to continue investigating. They put on a good show that's for sure! The food, the bevvies, the company, it was a smash hit. Some dolled up tangerines, hey girls! Mmmm Monday's

It is no secret that I adore pasta. Baked, stuffed, with marinara, with butta and Parmesan, mmm, mmm, mmm! Also no secret is my excitement when I find a new recipe that is easy-peasy and allows for meal planning, meaning I make it once, we reheat for lunches, dinners etc. AKA hence the purpose of this blog post ;) It all started when I found a "skinny" recipe for stuffed shells with spinach. I love this because it calls for very few ingredients, ones I mostly always have on hand anyway, and is quite simple/fun to assemble. The pictures ahead show a play-by-play of how to create this positively delicious meal. I made one dish with homemade sauce (eek, I made my own sauce!!!) and during the process I decided to throw a dish of Alfredo together to mix it up. Both were delicious but I have to say the Alfredo were both mine and Hunty's fave :) Fresh green beans tossed with olive oil and sea salt and a dollop of fresh ricotta on top of the marinara shell

Belated Weekend Recap: BBQ, pumpkins, & other adventures

My weekend was quite enjoyable. Hunter and I relaxed yet got things done. It was a fantastic balance. Let's get on with it, shall we? Let's get the obligatory dog pic out of the way. This is merely one of the random that are snapped of these beasts, natch: Winter Garden Farmer's Market y'all. This is a wonderful market with so many awesome vendors. We went for both biz and for pleaz. I was interviewing an artist so when I was done we wandered around for pics and scenery. Gorgeous area, btw. We had some down home deliciousness for lunch, aka Harry and Larry's BBQ . If you ever find your self in the area, don't think twice about this stop. Hurdles and Turtles

I ran into a peer of mine at school and he shared his final month's work for his thesis. His work is solid, well planned, and his passion is evident and contagious. Aside from being very inspiring, it's a light at the end of the tunnel for me. As I am in my last semester of grad school, I am eager to finish strong but also quick. I am how you say, um...oh yea. Burnt.Out. I am exhausted and tired and feeling at capacity from everything I invest myself in. As much as I want the next four months to fly by so I can regain my freedom from an academic schedule, I am also very nervous. It is put up or shut up time. It is truth or shame the devil time. Was everything worth it that I just put my hopes, determination, and sanity into? Will it pay off? Eye on the prize, Meggie. That's what my mother says to me every day. A Little Wordy Recap for September

So September has come and gone and that is wonderful/sad. I love September because it is so transitional and has a fresh appeal. Such a good, love filled month so without further ado, away we go........... I so got to cover Mall at Millenia Fashion Week and it.was.super.fun. Watch here! It was challenging to capture shots in a packed crowd of people and exhilarating at the same time. If I could do this all day, err day, you betcha I would! A mid month bach party with a theme of black ensembles and pink accessories caused me to commit myself to a group since I may just have a problem.
